Yum Yum In My Tum!

So every night it's the same question, "what do you want for dinner?" And after going back and forth a million times one of us finally throws in the towel and makes a decision. It's usually me, and it's usually because I get to the point of being "hangry" (which for me is the state right after hunger, but before becoming catatonic). Last night was one of those nights. I love to cook, I really do take pleasure in making delicious food for people to enjoy. It gives me satisfaction, and gives those who are eating satisfaction as well. So last night after, the usual back-and-forth, I decided to see what we had in the refrigerator, and put together "somethin nice" for my husband and sister. My solution, I made Mozzarella Caprese sandwiches. It's actually more like a mixture of a Caprese Salad and a Bruschetta. Which are two of my favorite italian appetizers.


So here's how I did it:
Ingredients: -French Baguette -Extra Virgin Olive Oil -Fresh Garlic -Salt -Pepper -Balsamic Glaze -Fresh Mozzarella -Small Red Tomatoes -Fresh Basil
1. Preheat oven 400-450 degrees (depends on your oven, mine gets very hot, so I do 400)
2. Cut your bread lengthwise and into whatever size of sandwich you want.
3. With a pastry brush or spoon (I sometimes use the back of the spoon to spread things if I don't have a pastry brush) brush the inside of the bread with the olive oil.
4. Take a garlic clove that's been pealed and cut in half and rub the bread with the garlic. (This just gives it a light garlic fragrance that's so delicious)
5. Place the bread on a baking sheet with the inside that's been brushed with olive oil and garlic facing upwards.
6. After about 10 minutes pull the bread out. You don't want it to burn, you just want it lightly toasted. (Usually the minute I smell the bread, I know it's done)
7. Season the bread with salt and pepper to taste, and let it cool.
8. Meanwhile, dice up the the tomatoes, slice the Mozzarella, and chop up the basil.
9. Then you're ready to assemble. First a bit of the glaze. "Butter the bread up" with glaze (I love this stuff, SO GOOD!) then fan out the mozzarella, add on the tomato, and sprinkle on the fresh basil.
10. And "voila" all done. Cut in an angle and enjoy!
